Fruit-Filled Cantaloupe Baskets and the Egg~Asparagus Roll~ups make a wonderful weekend brunch. Invite another family over to enjoy these with you. The sounds of the laughter of friends along with some treats for the palate make for wonderful memories.
Best-Ever Banana Bread (Print this)
1 1/4 cups sugar
1/2 cup butter, softened
2 eggs
1 1/2 cups mashed very ripe bananas (3 to 4 medium)
1/2 cup buttermilk
1 tsp. vanilla
2 1/2 cups Gold Medal all purpose flour
1 tsp. baking soda
1 tsp. salt
1 cups chopped nuts (optional)

Heat oven to 350 degrees.
Grease bottoms only of two (8 X 4') or one (9 X 5') loaf pan.
In large bowl, mix sugar and butter. Add eggs, bananas, buttermilk, and vanilla; beat with electric mixer on medium speed until smooth. Stir in flour, baking soda, salt, and nuts unitl moistened.
Pour batter into pans.
Bake 8' pans for 1 hour, or 9' pan for 1 1/4 hours, or until toothpick inserted in the center comes out clean. Cool for 10 minutes. Loosen sides from pans; remove from pans to cooling rack.
Cool about 1 hour before slicing.
