Fruit-Filled Cantaloupe Baskets and the Egg~Asparagus Roll~ups make a wonderful weekend brunch. Invite another family over to enjoy these with you. The sounds of the laughter of friends along with some treats for the palate make for wonderful memories.
St. Patrick's Day Cupcakes (Print this)
Ingredients:
1 3/4 cup flour
1 sm. box instant pistachio pudding mix
3/4 cup mini chocolate chips,
2/3 cup sugar
2 1/2 tsp. baking powder
1/2 tsp. salt
2 eggs
1 1/4 cup milk
1/2 cup oil
1 tsp. vanilla

Prep Instructions:

In a large mixing bowl stir together the flour, pudding mix, mini chocolate pieces, sugar, baking powder and salt. In a small bowl combine eggs, milk, oil and vanilla and stir into flour mixture just till combined. Fill muffin cups 2/3 full.
Bake 375 deg. for 15 min. or till golden brown. Cool.

Frost with cream cheese frosting. Sprinkle with green decorators sugar and top with mini chocolate pieces.
